T. Cook’s at Royal Palms Resort and Spa
Michelle Burger – 10-ounce burger topped with sherry marinated tomatoes, Manchego cheese, arugula, mini sweet chili aioli and a mixture of asparagus chips and haystack onions. The combination of bubbly cheese with the sweet and spicy chili aioli, and the side of chips and onions gives this dish a Southwestern twist. $14

Grilled Kobe Burger – Set in the sultry Sonoran Desert, W Scottsdale offers hotel guests a taste of the Southwest with a grilled Kobe burger served on an herb foccacia bun with shoe string fries and choice of: cheddar cheese, blue cheese or jalapeno jack cheese. Rita’s Burger – 7oz. beef burger layered with roasted Poblano peppers, ancho spiced crispy onion, cilantro-Poblano remoulade (which also has sour cream, key lime, avocado), burger is dusted with guajillo chili pepper, served with sweet potato fries and cilantro lime dip. $15

Achiote Salmon Burger – incorporates seasonings and flavors associated with the southwest with achiote seasoning and a veracruz sauce. $18.00
ROQ at InterContinental Montelucia
Beef Machaca Burger – braised short rib “slow braised” for eight hours with hatch pepper, tomatoes, onions and southwestern spices; pepperjack; sweet corn; and chipotle spread. The spread is made of fresh grilled corn sautéed with garlic, onions, salt, pepper and chipotle. Cream is added then simmered, reduced and finally puréed in a food processor until smooth. The burger is assembled on a grilled brioche bun and served with ‘secret recipe’ salsa verde. $16
